Happy Mother's Day to all the moms out there! I'm going to sneak back upstairs into bed so I can enjoy the fab breakfast my family has planned to "surprise" me with. I am just so excited, my darling daughter makes the most heavenly scrambled eggs. :) -

1 small granny smith apple
1/4 large onion
1 large can chicken breast, drained
1 handful baby spinach
3 teaspoons taco mix
two or three twists freshly cracked pepper
