Taco Chicken Salad 
1 carrot
1 small granny smith apple
1/4 large onion
1 large can chicken breast, drained
1 handful baby spinach
3 teaspoons taco mix
two or three twists freshly cracked pepper
2 tablespoons sweet pickle relish
3 tablespoons mayonaise

Toss everything down to the chicken in a food processor, pulse a few times until the carrot, apple, and onion are about the size of the bits in the sweet pickle relish. Drop in the spinach, pulse a time or two, dump in a bowl, add the rest, and stir up.

I was looking for a way to make something to use up the half a bag of corn chips I had left after making layer dip, spied the chicken I had planned for a chicken salad for lunch sitting beside a packet of organic taco seasoning, and this is the result. If you like it a little spicy, add a seeded jalapeno. If you like it a lot spicy, add two whole. :D
